Vegetarian Butternut Squash Soup – Ready in One Hour!

Butternut squash soup out of a box is basically my favourite as far as store bought soup goes, and this recipe comes very close to that! I do find it’s a bit on the salty side, so if you prefer a less salty soup, leave out a bit of the bouillon. This also went over well with my husband (who doesn’t like “baby food soups”) and my baby girl (who ADORES “baby food soups”). All in all, a great recipe – and it only takes an hour so it’s the perfect after work meal! I’d love to see how it turns out for others! I got the base for this recipe on AllRecipes and then adapted it to suit our needs.

  1. Melt butter in large saucepan over medium heat. Prepare all vegetables and add to saucepan. Saute for 5 minutes until onions are translucent.

2. Add vegetable stock and bring to a boil. Simmer 35 minutes over medium-low heat until vegetables are cooked and mushy.

3. Transfer soup to a blender and blend until smooth. Return to saucepan.

4. Add water to get the consistency you would like. If you want a thick soup you can skip this step.

5. Season to your liking with nutmeg, salt, and pepper. Enjoy!

1/3 cup butter
1 medium butternut squash – peeled and cubed
3 medium potatoes – peeled and cubed
1 medium onion – chopped
1 large stalk celery – chopped
3 medium carrots – peeled and chopped
4 cups vegetable stock
1-3 cups water (optional)
1-2 tsp nutmeg
salt/pepper to taste

      I agree, they can be difficult to chop. I find that cutting it into smaller chunks helps. I usually try to peel the whole thing and then cut it into 4 before trying to dice it.. still not an easy task though!

      It’s a great way to use up the butternut squash that you buy. I find at the grocery store I always buy things that seem healthy, and then I get home and have no idea what to do with them!

      I have had the same struggles with butternut squash, especially when trying to make it appetizing for the boys in my house. My husband doesn’t usually like pureed soups, but he said he’d eat it again! (Which is really saying something.) I’d love to see how yours turns out, and if you change any of the details.
