Grandma’s Hasty Pudding

This is a recipe I grew up enjoying. It was passed down from my Grandmother.

Preheat oven to 350 F’
Grease casserole dish or medium or large sized oven proof bowl.

Cake mixture:
1 cup flour
1/3 cup sugar
¼ tsp. salt
¼ tsp. baking powder
½ cup raisins
1 tbsp. butter (or margarine)
2/3 cup milk
In medium sized bowl mix flour, sugar, baking powder and salt together. Cut butter into dry mixture. Stir in milk and mix well. Add raisins and stir. Set aside.

1 cup brown (or Yellow) sugar
2 tbsp. flour
2 cups boiling water
1 tbsp. butter
1/8 tsp salt
2 tsp vanilla
In medium sized sauce pan mix brown sugar and flour together. Stir in boiling water. Then add butter and salt. Bring to a boil over medium heat, then remove. Stir in vanilla.
Pour sauce into greased casserole dish.
Drop in cupcake sized scoops of cake mixture into sauce in casserole dish.
Bake for 30 minutes in oven.

Serving suggestions:
We have served with a topping of some half and half cream, or ice cream. I prefer having this dessert while it is still warm.
