Maple Tapioca Pudding


1 egg yolk    

2 cups milk             

¼ cup brown sugar (Loose-not packed)

1/8 cup butter

3 tbsp. minute tapioca

1/8 tsp salt


Put egg yolk into medium sauce pan. Stir in a small amount of milk and whisk together until smooth. Then add the rest of the milk and whisk. Now add the brown sugar and whisk together. Add the butter and minute tapioca and salt. Cook and stir over medium heat until it’s a rolling boil. Remove from heat. Set aside.

Maple Tapioca Pudding



1 egg white

1 tbsp. white sugar

¼ tsp maple flavoring


In a medium sized bowl beat egg white until soft peaks form. Add sugar and beat until you have stiff peaks. Add flavorings.


Pour hot tapioca mixture over egg white mixture and mix together well. Cool in refrigerator.

Serve cold. Makes about 6 servings.



-If maple flavouring isn’t the desired flavour you may substitute maple flavouring for 1/2 teaspoon of vanilla flavouring.

-You may also substitute brown sugar with 1/4 cup of maple syrup. When doing this you do not need to use maple flavouring. Add 1 more tbsp. of tapioca when using maple syrup.
